Ingredients
4 Ripe white Nectarines, remove stones, coarsely chopped
1 1/2 tbsp Caster sugar
500g Reduced fat vanilla yoghurt
Method
Mix together Nectarine, sugar and 60ml water in a saucepan over medium-low heat. Cook stirring frequently, for 10 mins or until nectarines are tender. Remove from heat and set aside to cool.
Place Nectarine mixture in food processor. process until smooth. Scoop half Nectarine mix evenly among 8 125ml ice-block moulds. top with yoghurt. continue layering with remaining Nectarine mix and yoghurt. Insert sticks, place in freezer for 6 hours or until frozen.
